Monleale and Capriata d'Orba Terroir

Our high-altitude vineyards at 410 meters in Monleale and the limestone-rich soils of Capriata d'Orba form the backbone of our wines:

  • Fossil-rich Sant'Agata formations with limestone and gypsum soils that impart mineral structure to Timorasso
  • Red marine clay and calcareous limestone in Capriata d'Orba, home to Nebbiolo, Dolcetto, and our Monferrato Rosso blend
  • Low yields to concentrate flavor, minerality, and structure
  • Manual harvest early in the morning, with rigorous double hand-sorting in the vineyard and cellar

Cellar Management: Elegance and Depth

For our whites and reds alike, we adopt meticulous vinification designed to enhance structure and complexity:

  • Fermentation and Aging in Wood: Timorasso ferments and ages in 228-liter French oak barriques. This size is crucial to give the wine consistency, depth, and perfect integration between fruit and wood.
  • Chassin Toast Selection: The staves come from the prestigious Chassin cooperage, sourced from the Jupilles forest—the same wood favored by the most renowned Puligny-Montrachet crus, known for imparting silky texture, impeccable balance, and layered depth.
  • Sur Lie Style and Complexity: Prolonged sur lie aging brings desired complexity without ever making the wine heavy, maintaining the distinctive elegance of the grape.
  • Red Wine Precision: Our Dolcetto benefits from small-vessel fermentation (23–35 hL), temperature control, and 6–9 months aging in a blend of stainless steel and oak to preserve fruit purity while building structure.
